Ingredients (Classic Layered Version)

  • 1 lb lean ground beef

  • 3 large russet potatoes, peeled and sliced ¼” thick

  • 2 sweet onions, sliced ¼” thick

  • 1 can (14.5 oz) diced tomatoes, undrained (fire-roasted preferred)

  • 2 medium green bell peppers, diced

  • Salt & pepper, to taste

  • Optional: garlic powder, crushed red pepper, butter, pepperoncini for extra flavor

Instructions

  1. Prepare & Preheat
    Preheat oven to 350 °F (175 °C). Lightly grease a 9×13-inch baking dish .

  2. Brown the Beef
    In a skillet over medium-high heat, cook ground beef until browned. Season with salt, pepper, and optional spices. Drain excess fat .

  3. Layer the Casserole

    • Place a layer of half the sliced potatoes in the dish. Season.

    • Top with half of the beef, sliced onions, bell peppers, and tomatoes (with juices).

    • Repeat layers with remaining potatoes, beef, onions, bell peppers, and tomatoes .

  4. Bake
    Cover the dish tightly with foil and bake for about 2 hours, until potatoes are tender and flavors meld beautifully .

  5. Rest & Serve
    Let the casserole rest for 5–10 minutes before serving. This helps it set and makes slicing easier .
