Easy Marinated Cheese Appetizer

 Ingredients

For the Appetizer:

  • 8 oz sharp cheddar cheese, cut into ¾-inch cubes

  • 8 oz Monterey Jack or pepper jack cheese, cut into cubes

  • 4 oz hard salami, sliced and cut into quarters or thick strips

  • ½ cup green olives, pitted (whole or halved; use Castelvetrano or Manzanilla)

  • ¼ cup roasted red peppers, chopped (optional but flavorful)

  • 2 tbsp capers (optional, for extra briny bite)

For the Marinade:

  • ½ cup olive oil

  • ¼ cup red wine vinegar (or white balsamic for a milder tang)

  • 1½ tsp Dijon mustard

  • 1 clove garlic, minced

  • ½ tsp dried oregano

  • ½ tsp crushed red pepper flakes (optional for heat)

  • Salt & black pepper, to taste

  • 1 tbsp chopped fresh parsley or basil (for garnish before serving)

 Instructions

Step 1: Prep the Main Ingredients

  1. Cube the cheeses and slice the salami. Try to make them all similar in size for even marination and a neat presentation.

  2. Drain the olives and capers (if using).

  3. Combine cheese, salami, olives, and red peppers in a large bowl or wide, shallow dish.

Step 2: Make the Marinade

  1. In a small bowl or jar with a lid, combine:

    • Olive oil

    • Vinegar

    • Dijon mustard

    • Garlic

    • Oregano

    • Crushed red pepper flakes

    • Salt & pepper

  2. Whisk or shake until fully emulsified.

Step 3: Marinate the Cheese

  1. Pour the marinade over the cheese-salami mixture.

  2. Toss gently with a spatula or spoon to coat everything evenly.

  3. Cover the bowl tightly or transfer to a sealed container.

  4. Refrigerate for at least 4 hours, preferably overnight.

Toss once or twice while marinating for even flavor distribution.

Step 4: Serve

  1. Bring to room temperature 15–20 minutes before serving to allow the olive oil to liquify and the flavors to shine.

  2. Garnish with chopped parsley or basil.

  3. Serve with:

    • Toothpicks

    • Crackers

    • Crostini

    • As part of a charcuterie or antipasto platter

 Storage

  • Refrigerator: Store in an airtight container for up to 5 days.

  • Make-Ahead Friendly: Best after 12–24 hours of marinating.
