Gluten free banana bread

 Ingredients

Dry Ingredients:

  • 1¾ cups (220g) gluten-free all-purpose flour blend
    (with xanthan gum if your blend doesn’t include it)

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 teaspoon ground cinnamon (optional)

  • ¼ teaspoon nutmeg (optional)

Wet Ingredients:

  • 3 medium overripe bananas, mashed (~1¼ cups)

  • 2 large eggs

  • ½ cup (120ml) neutral oil (or melted coconut oil)

  • ½ cup (100g) brown sugar or coconut sugar

  • 1 teaspoon pure vanilla extract

  • ¼ cup (60ml) milk of choice (dairy or non-dairy like almond, oat, etc.)

Optional Add-Ins:

  • ½ cup chopped walnuts or pecans

  • ½ cup dark chocolate chips (gluten-free certified)

  • ¼ cup shredded coconut or dried fruit

 Equipment Needed

  • 8×4″ or 9×5″ loaf pan

  • Mixing bowls (1 large, 1 medium)

  • Whisk or fork

  • Rubber spatula or wooden spoon

  • Parchment paper or cooking spray

 Instructions

 Preheat & Prep

  • Preheat oven to 350°F (175°C).

  • Grease or line your loaf pan with parchment paper.

 Mix Dry Ingredients

  • In a medium bowl, whisk together:

    • Gluten-free flour

    • Baking soda

    • Salt

    • Cinnamon & nutmeg (if using)

 Mix Wet Ingredients

  • In a large bowl, mash bananas well.

  • Add eggs, sugar, oil, vanilla, and milk. Whisk until smooth and combined.

 Combine the Batter

  • Add dry ingredients into wet. Stir gently until just combined.

  • Fold in any mix-ins like nuts or chocolate chips.

  • Batter will be thick.

 Bake

  • Pour into the prepared loaf pan and smooth the top.

  • Bake for 50–60 minutes, or until a toothpick inserted comes out clean or with a few moist crumbs.

Tip: Cover loosely with foil halfway through if the top is browning too quickly.

 Cool

  • Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool fully.

  • Slice once cooled for best texture.
