  • 1 pound (450g) corned beef, thinly sliced
  • 1 cup sauerkraut, drained
  • 8 slices Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 2 tablespoons unsalted butter, softened

Instructions:

  1. Assemble Sandwiches:
    • Spread softened butter on one side of each slice of rye bread. Place the slices butter-side down on a clean surface.
    • Layer the corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing evenly among 4 slices of bread.
  2. Top and Grill:
    • Top each sandwich with the remaining slices of bread, butter-side up.
  3. Preheat Blackstone Griddle:
    • Preheat your Blackstone griddle over medium heat until hot.
  4. Grill Sandwiches:
    • Place the assembled sandwiches on the hot griddle. Grill for 3-5 minutes on each side, or until the bread is golden brown and the cheese is melted.
  5. Press and Serve:
    • If desired, place a heavy skillet or sandwich press on top of the sandwiches to help flatten them while cooking.
  6. Serve:
    • Once the sandwiches are cooked to your liking, remove them from the griddle and slice them diagonally.
  7. Enjoy:
    • Serve the delicious Blackstone Reubens hot, accompanied by pickles or potato chips, for a classic and satisfying meal.

Note: Feel free to customize your Reubens by adjusting the amount of ingredients or substituting them with your favorite alternatives. Additionally, you can add a tangy coleslaw or pickles to the sandwiches for extra flavor and texture.
