 Ingredients

For the Chicken Bites:

  • 1½ lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice (or vinegar)

  • 2 cloves garlic, minced

  • 1 teaspoon smoked paprika (or regular paprika)

  • 1 teaspoon onion powder

  • 1 teaspoon dried oregano or Italian seasoning

  • ½ teaspoon salt

  • ½ teaspoon black pepper

  • Optional: pinch of chili flakes for heat

Optional Dipping Sauces:

  • Ranch dressing

  • Garlic aioli

  • Honey mustard

  • Tzatziki

  • BBQ sauce

 Instructions

 Step 1: Prepare the Chicken

  • Cut the chicken into bite-sized chunks, about 1–1.5 inches.

  • Pat dry with paper towels and place in a large bowl or zip-top bag.

 Step 2: Marinate (Optional but Recommended)

  • In a small bowl, whisk together:

    • Olive oil

    • Lemon juice

    • Garlic

    • Paprika, onion powder, oregano, salt, pepper, and chili flakes (if using)

  • Pour the marinade over the chicken, toss to coat well.

  • Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

 Step 3: Grill the Chicken Bites

Option A: Grill Pan or Outdoor Grill

  1. Preheat your grill or grill pan over medium-high heat.

  2. Lightly oil the grates or spray the pan to prevent sticking.

  3. Grill the chicken bites for 4–5 minutes per side, or until nicely charred and the internal temperature reaches 165°F (74°C).

Option B: Skewers (Optional)

  • For presentation or easy flipping, thread the marinated chicken pieces onto soaked wooden or metal skewers and grill as above.

Option C: Air Fryer or Stovetop

  • Air Fryer: Cook at 375°F (190°C) for 8–10 minutes, shaking halfway.

  • Stovetop: Cook in a cast iron skillet over medium-high heat, about 4–6 minutes total.

 Step 4: Serve

Let the chicken rest for 2–3 minutes before serving. Serve hot with dipping sauces, over salads, in wraps, rice bowls, or pasta dishes.
