hamburger buns

Ingredients:

  • 2 ½ cups gluten-free all-purpose flour (with xanthan gum if not included)
  • 1 tablespoon sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • ¾ cup warm milk (dairy or non-dairy)
  • 3 tablespoons unsalted butter, melted (or coconut oil for dairy-free)
  • 1 tablespoon apple cider vinegar
  • Sesame seeds (optional, for topping)

Instructions:

Step 1: Activate the Yeast

  1. In a small bowl, mix the warm milk with the sugar and instant yeast. Stir to combine, and let it sit for 5-10 minutes until it becomes frothy and bubbly (this means the yeast is active).

Step 2: Mix the Dry Ingredients

  1. In a large mixing bowl, whisk together the gluten-free flour and salt.

Step 3: Combine the Wet Ingredients

  1. In a separate bowl, whisk the eggs, melted butter (or oil), and apple cider vinegar. Once the yeast mixture is frothy, add it to the wet ingredients.

Step 4: Make the Dough

  1. Gradually add the wet ingredients to the flour mixture. Stir until a smooth, slightly sticky dough forms. You can use a stand mixer with the dough hook attachment or mix by hand with a spatula.

Step 5: Let the Dough Rise

  1. Cover the dough with a clean kitchen towel and let it rise in a warm place for about 45 minutes to 1 hour, or until it has doubled in size.

Step 6: Shape the Buns

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Divide the dough into 6-8 equal portions (depending on the size of the buns you want). Shape each portion into a ball and slightly flatten them to form buns. Place the buns on the prepared baking sheet.

Step 7: Optional Topping

  1. Lightly brush the tops of the buns with water or an egg wash (whisk 1 egg with a tablespoon of water) and sprinkle with sesame seeds, if desired.

Step 8: Bake the Buns

  1. Bake the buns in the preheated oven for 15-20 minutes, or until they are golden brown on top and sound hollow when tapped on the bottom.
  2. Remove from the oven and let the buns cool on a wire rack before slicing and serving.

Tips:

  • Flour Blends: Ensure your gluten-free flour blend contains xanthan gum or add 1 teaspoon if not included.
  • Storage: These buns can be stored in an airtight container for up to 3 days or frozen for up to 3 months. To refresh, lightly toast or warm them before serving.
  • Dairy-Free: Use coconut oil and a non-dairy milk alternative like almond milk or oat milk for a dairy-free version.
