Wet Ingredients:

  • 1 cup (240ml) warm milk (around 110°F / 43°C)

  • 2 tablespoons (30g) unsalted butter, melted

  • 1 large egg, room temperature

Cheese Filling & Topping:

  • 1 ½ cups (150g) shredded sharp cheddar cheese

  • ½ cup (50g) parmesan cheese, grated (optional, for extra depth)

  • 1 teaspoon garlic powder (optional)

  • ½ teaspoon paprika or crushed black pepper for topping

  • 1 tablespoon melted butter (for brushing the top)

Instructions

Step 1: Activate the Yeast (10 minutes)

In a small bowl or measuring cup, add warm milk and stir in the sugar. Sprinkle the active dry yeast on top and let it sit for 5–10 minutes until it becomes foamy. This means your yeast is alive and active.

Step 2: Make the Dough (10 minutes)

In a large mixing bowl, combine flour and salt. Add the yeast mixture, melted butter, and beaten egg. Stir with a wooden spoon until it forms a sticky dough.

If you’re using a stand mixer, use the dough hook and mix on medium speed for 4–5 minutes until the dough becomes smooth and elastic. If kneading by hand, transfer it to a lightly floured surface and knead for 8–10 minutes.

Step 3: First Rise (1 hour)

Shape the dough into a ball and place it in a lightly greased bowl. Cover it with a towel or plastic wrap and let it rise in a warm, draft-free spot for about 1 hour or until it doubles in size.

Step 4: Add the Cheese (10 minutes)

Once risen, punch down the dough gently. Turn it out onto a floured surface. Roll or press it out into a rectangle, about 10 x 14 inches.

Sprinkle the shredded cheddar and parmesan evenly across the dough. If desired, sprinkle garlic powder for extra flavor.

Starting from the shorter end, roll the dough into a log, like a jelly roll. Pinch the seam to seal it. Place the loaf seam-side down into a greased loaf pan.

Step 5: Second Rise (30 minutes)

Cover the loaf again and let it rise for another 30 minutes. During this time, preheat your oven to 350°F (175°C).

Step 6: Bake the Cheese Loaf (35–40 minutes)

Brush the top of the loaf with melted butter and sprinkle a little paprika or cracked black pepper. Bake in the preheated oven for 35–40 minutes or until golden brown and the top is firm and crusty.

To check doneness, tap the bottom of the loaf — it should sound hollow. You can also insert a thermometer; the internal temp should be around 190°F (88°C).

Step 7: Cool and Serve (20 minutes)

Remove the loaf from the pan and place it on a wire rack to cool for at least 15–20 minutes before slicing. This helps lock in the moisture and makes slicing easier.
