Honey Bacon Glazed Chicken

 Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 tbsp olive oil or butter

  • Salt and black pepper, to taste

  • 1/2 tsp paprika (optional)

  • 1/2 tsp garlic powder

For the Honey Bacon Glaze:

  • 6 slices thick-cut bacon, diced

  • 1/3 cup honey

  • 2 tbsp Dijon mustard (or yellow mustard)

  • 1 tbsp soy sauce (or coconut aminos)

  • 2 tsp apple cider vinegar

  • 1 clove garlic, minced

  • Optional: pinch of red pepper flakes or cayenne for heat

 Instructions

Step 1: Cook the Bacon

  1. In a large skillet over medium heat, cook diced bacon until crispy.

  2. Use a slotted spoon to transfer bacon to a paper towel–lined plate.

  3. Drain all but 1 tbsp of bacon fat from the pan — leave it in for flavor!

Step 2: Cook the Chicken

  1. Season chicken breasts with salt, pepper, garlic powder, and paprika.

  2. In the same skillet, add olive oil (or a dab of butter if needed) and sear the chicken over medium heat.

  3. Cook for about 5–6 minutes per side, or until golden brown and cooked through (internal temp: 165°F / 74°C).

  4. Remove chicken and set aside on a plate; keep warm.

Step 3: Make the Glaze

  1. In a small bowl, whisk together honey, Dijon mustard, soy sauce, apple cider vinegar, and garlic.

  2. Pour mixture into the same skillet (with remaining bacon fat) and simmer over medium heat for 2–3 minutes, stirring frequently, until slightly thickened.

 Tip: Stir in a pinch of chili flakes or cayenne for a kick!

Step 4: Glaze the Chicken

  1. Return the chicken to the skillet, spoon glaze over the top, and cook for another 2–3 minutes until everything is coated and sticky.

  2. Sprinkle the crispy bacon over the chicken just before serving.

  3. Garnish with fresh parsley or thyme if desired.

  • Creamy mashed potatoes

  • Roasted green beans or Brussels sprouts

  • Garlic butter rice or wild rice

  • A crisp garden salad

  • Freezer: Wrap tightly and freeze for up to 2 months (glaze may thin after thawing).

  • Reheat: Warm in a skillet over medium-low or microwave with a splash of water to loosen the glaze.
