Italian stuffed chicken roll ups

Italian stuffed chicken roll-ups are a delicious and versatile dish that can be tailored to various tastes. Here’s a classic recipe that includes a filling of spinach, ricotta, and sun-dried tomatoes, all wrapped in tender chicken breast and baked to perfection.

Ingredients:

For the Chicken Roll-Ups:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup fresh spinach, chopped
  • 1/2 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 clove garlic, minced
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1/2 cup shredded mozzarella cheese
  • 1 cup marinara sauce

For the Breading (optional):

  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 eggs, beaten

Instructions:

Prepare the Chicken:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Flatten the Chicken: Place a chicken breast between two sheets of plastic wrap or wax paper. Using a meat mallet or rolling pin, pound the chicken to an even thickness of about 1/4 inch. Repeat with the remaining chicken breasts.

Optional Breading:

  1. Prepare Breading: In a shallow dish, combine the breadcrumbs and Parmesan cheese. Place the beaten eggs in another shallow dish.
  2. Bread Chicken: Dip each chicken roll-up first in the beaten eggs, then roll in the breadcrumb mixture until evenly coated.

Bake the Chicken:

  1. Prepare Baking Dish: Lightly grease a baking dish or line it with parchment paper.
  2. Add Sauce and Cheese: Place the chicken roll-ups in the prepared baking dish. Spoon marinara sauce over the top of each roll-up and sprinkle with shredded mozzarella cheese.
