Air fryer smashed potatoes

Ingredients:

  • 1.5 lbs baby potatoes (red or yellow)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • Salt and black pepper to taste
  • Optional toppings: sour cream, chopped chives, grated cheese

Instructions:

Preparing the Potatoes:

  1. Boil Potatoes: In a large pot, bring water to a boil. Add a pinch of salt and the baby potatoes. Boil for about 15-20 minutes or until the potatoes are fork-tender.
  2. Drain Potatoes: Drain the potatoes and let them cool slightly.

Smashing the Potatoes:

  1. Preheat Air Fryer: Preheat your air fryer to 400°F (200°C).
  2. Prepare Potatoes: Place the boiled potatoes on a baking sheet. Using the back of a fork or a potato masher, gently smash each potato to flatten it, keeping the skin intact.
  3. Season Potatoes: In a small bowl, mix olive oil, minced garlic, dried rosemary, salt, and black pepper. Brush this mixture over each smashed potato, making sure to get some of the flavors into the nooks and crannies.

Air Frying:

  1. Air Fry: Arrange the smashed potatoes in a single layer in the air fryer basket. Cook in the preheated air fryer for 12-15 minutes or until the edges are crispy and golden brown.
  2. Flip and Cook: If desired, flip the potatoes halfway through the cooking time to ensure even crispiness.

Serving:

  1. Remove and Garnish: Once the smashed potatoes are done, carefully remove them from the air fryer. Transfer to a serving plate and garnish with your favorite toppings such as sour cream, chopped chives, or grated cheese.
