Ingredients

  • 1 ½ cups shredded whole-milk, low-moisture mozzarella cheese

  • ¼ cup freshly grated Parmesan cheese

  • Fresh basil or parsley, chopped (for garnish)

Instructions

Step 1: Prepare the Chicken & Station

Preheat your oven to 400°F (200°C). Place a wire rack on a rimmed baking sheet and lightly grease it, or simply line the sheet with parchment paper and brush generously with avocado oil. This oiled surface will help the bottom get crispy.

Place one chicken breast between two sheets of plastic wrap. Using the flat side of a meat mallet or a rolling pin, gently pound the chicken to an even ½-inch thickness. Repeat with all breasts. This ensures even cooking and a better breading-to-chicken ratio. Pat the chicken completely dry with paper towels—this is crucial for the coating to stick.

Step 2: Create the Breading Assembly Line

Step 3: Bread the Chicken

Working with one piece at a time:

  • Dip: Submerge it into the egg wash, allowing any excess to drip off.

  • Coat Again: Return the chicken to the dry mixture (or the second dish) for a final, firm press to create a solid, even crust. Place the breaded cutlet on the prepared baking sheet. Repeat with remaining chicken.

Step 4: Bake to Golden Perfection

Drizzle or lightly spray the top of each breaded cutlet with a little more oil. This helps with browning.
Bake for 15 minutes on the middle rack. The coating should be set and starting to turn golden.

Step 5: Assemble and Melt

Carefully remove the baking sheet from the oven. Flip each chicken cutlet over—the bottom should be beautifully golden.

  • Sauce: Spoon about 2-3 tablespoons of sugar-free marinara over each cutlet.

  • Cheese: Top each with a generous portion of shredded mozzarella and a sprinkle of the remaining Parmesan.
    Return the sheet to the oven and bake for an additional 8-10 minutes, or until the cheese is completely melted, bubbly, and slightly spotted with brown.

Step 6: Rest and Serve
