Ingredients:
For the Chicken Marinade:
- 4 boneless, skinless chicken breasts
- 1 cup plain Greek yogurt
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and black pepper to taste
For Cooking:
- 2 tablespoons butter
- 2 tablespoons olive oil
Instructions:
Marinating the Chicken:
- Prepare Marinade: In a bowl, mix together Greek yogurt, olive oil, minced garlic, dried oregano, dried thyme, smoked paprika, salt, and black pepper.
- Marinate Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 4 hours.
Cooking the Chicken:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Remove Chicken from Marinade: Take the marinated chicken out of the refrigerator and let it come to room temperature for about 15 minutes.
- Sear Chicken: In an ovenproof skillet, heat olive oil and butter over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until they get a golden brown crust.
- Bake in Oven: Transfer the skillet to the preheated oven and bake for about 15-20 minutes or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Serving:
- Rest and Slice: Remove the chicken from the oven and let it rest for a few minutes before slicing.
- Serve Hot: Serve the melt-in-your-mouth chicken slices with your favorite sides, such as roasted vegetables, rice, or a fresh salad.
