Preparation Time: 15 minutes
Marinating Time: 30 minutes to 4 hours
Cooking Time: 25 minutes
Total Time: 1 hour 10 minutes
Servings: 4

Ingredients:

For the Chicken Marinade:

  • 4 boneless, skinless chicken breasts
  • 1 cup plain Greek yogurt
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and black pepper to taste

For Cooking:

  • 2 tablespoons butter
  • 2 tablespoons olive oil

Instructions:

Marinating the Chicken:

  1. Prepare Marinade: In a bowl, mix together Greek yogurt, olive oil, minced garlic, dried oregano, dried thyme, smoked paprika, salt, and black pepper.
  2. Marinate Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it’s well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, up to 4 hours.

Cooking the Chicken:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Remove Chicken from Marinade: Take the marinated chicken out of the refrigerator and let it come to room temperature for about 15 minutes.
  3. Sear Chicken: In an ovenproof skillet, heat olive oil and butter over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until they get a golden brown crust.
  4. Bake in Oven: Transfer the skillet to the preheated oven and bake for about 15-20 minutes or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.

Serving:

  1. Rest and Slice: Remove the chicken from the oven and let it rest for a few minutes before slicing.
  2. Serve Hot: Serve the melt-in-your-mouth chicken slices with your favorite sides, such as roasted vegetables, rice, or a fresh salad.

Enjoy:

Enjoy the tender and flavorful goodness of this melt-in-your-mouth chicken! The combination of the yogurt marinade and the oven cooking method ensures a juicy and delicious result.

Feel free to customize the marinade with additional herbs or spices to suit your taste preferences. Lemon zest or juice can also add a refreshing citrusy flavor to the marinade.
