This No-Bake Chocolate Éclair Cake is an easy, crowd-pleasing dessert with layers of creamy vanilla pudding, graham crackers, and a rich chocolate topping. No oven required!

Ingredients (Serves 12–15)

Cake Layers

  • 2 (3.4 oz) boxes vanilla instant pudding mix
  • 3 cups cold milk
  • 1 (8 oz) container whipped topping (Cool Whip)
  • 1 box graham crackers

Chocolate Topping

  • ½ cup unsalted butter
  • ⅓ cup cocoa powder
  • ¼ cup milk
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Filling

  1. In a large bowl, whisk together pudding mix and milk until smooth and thick.
  2. Gently fold in the whipped topping until fully combined.

2. Assemble the Layers

  1. In a 9×13-inch baking dish, arrange a single layer of graham crackers at the bottom.
  2. Spread half of the pudding mixture evenly over the crackers.
  3. Add another layer of graham crackers, then spread the remaining pudding mixture on top.
  4. Finish with a final layer of graham crackers.

3. Make the Chocolate Topping

  1. In a saucepan over medium heat, melt the butter.
  2. Whisk in the cocoa powder and milk until smooth.
  3. Remove from heat and stir in powdered sugar and vanilla extract until glossy.
  4. Pour the chocolate topping over the final graham cracker layer and spread evenly.

4. Chill & Serve

  1. Cover and refrigerate for at least 4 hours (overnight is best) to soften the graham crackers.
  2. Slice and serve cold. Enjoy!
