Carnivore custard is a creamy, protein-rich dessert that uses only animal-based ingredients. It’s simple to make, deliciously smooth, and perfect for those following a carnivore or low-carb diet.

Ingredients

  • 4 large egg yolks
  • 1 whole egg
  • 1 ½ cups heavy cream
  • 2 tablespoons unsalted butter (optional, for richness)
  • 1 teaspoon vanilla extract (optional for flavor, omit for strict carnivore)
  • 2 tablespoons powdered glycine or allulose (optional, for sweetness, omit for strict carnivore)
  • Pinch of salt

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 325°F (160°C).
  2. Prepare a baking dish large enough to hold 4 small ramekins. Fill the dish halfway with water to create a water bath (bain-marie).

Step 2: Make the Custard Mixture

  1. In a medium bowl, whisk together the egg yolks, whole egg, and salt until smooth.
  2. In a small saucepan, heat the heavy cream and butter over medium heat until it just starts to steam (do not boil).
  3. Slowly pour the warm cream mixture into the eggs while whisking constantly to temper the eggs.
  4. Stir in the vanilla extract and sweetener, if using.

Step 3: Assemble the Custards

  1. Divide the custard mixture evenly among 4 ramekins.
  2. Place the ramekins in the prepared baking dish with the water bath.

Step 4: Bake

  1. Bake the custards for 25–30 minutes, or until the edges are set and the centers are slightly jiggly.
  2. Remove the ramekins from the water bath and let them cool to room temperature.

Step 5: Chill (Optional)

  1. For a firmer custard, refrigerate the ramekins for 1–2 hours before serving.

Serving Suggestions

  • Enjoy the custard warm, at room temperature, or chilled.
  • Top with a dollop of whipped cream or sprinkle with powdered glycine for a sweet touch (optional).
