Ingredients

  • 6 cups chopped fresh rhubarb (about 2 pounds, trimmed)

  • 1 to 1½ cups granulated sugar (to taste)

  • 1 teaspoon vanilla extract or paste (optional)

  • 1/2 teaspoon ground ginger or cinnamon (optional)

Note: The sugar amount can be adjusted based on your preference and the tartness of your rhubarb.


Instructions

Step 1: Prep the Rhubarb

  1. Wash and trim rhubarb stalks, discarding any leaves (they are toxic).

  2. Cut into 1-inch pieces. You should have about 6 cups.


Step 2: Cook the Rhubarb

  1. In a large, heavy-bottomed saucepan or Dutch oven, combine rhubarb and sugar.

  2. Let sit for 10–15 minutes. The sugar will draw out moisture from the rhubarb.

  3. Place the pot over medium heat. Bring the mixture to a simmer, stirring occasionally.

  4. Lower the heat and cook gently for 30–45 minutes, stirring often to prevent sticking or burning.

  5. The rhubarb will break down and become soft and thick.


Step 3: Blend (Optional for Smooth Texture)

  1. For a silky-smooth rhubarb butter, use an immersion blender directly in the pot.

  2. Alternatively, let the mixture cool slightly and puree in a blender or food processor until smooth.

  3. Return to the pot if needed and simmer for another 5–10 minutes until it reaches your desired thickness. The butter is done when a spoon dragged across the bottom leaves a clean trail.

Step 4: Flavor and Finish

  1. Stir in lemon juice, vanilla, or spices if using.

  2. Taste and adjust sweetness or flavor balance.

Step 5: Storage Options

Short-Term Storage:

  • Let the rhubarb butter cool.

  • Transfer to sterilized glass jars or containers.

  • Store in the refrigerator for up to 3 weeks.

Freezing:

  • Let cool completely and store in freezer-safe containers or jars with room for expansion.

  • Freeze for up to 6 months.

Optional Water Bath Canning:

If you’d like to preserve it for long-term shelf storage:

  1. Sterilize half-pint (8 oz) canning jars and lids.

  2. Pour hot rhubarb butter into jars, leaving 1/4-inch headspace.

  3. Wipe rims, apply lids, and screw on bands until fingertip-tight.

  4. Process in a boiling water bath for 10 minutes (adjust for altitude).

  5. Remove and let cool undisturbed. Check seals before storing in a cool, dark place for up to 1 year.
