  • ½ cup granulated sugar

  • 1 tablespoon cornstarch

  • 16 oz (450 g) cream cheese, softened

  • ¾ cup (150 g) granulated sugar

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 2 tablespoons all-purpose flour

  • ¼ cup sour cream (or Greek yogurt)

Step-by-Step Instructions

1. Prepare the Rhubarb Topping

In a medium saucepan, combine chopped rhubarb, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens and the rhubarb softens, about 5-7 minutes. Remove from heat and let cool to room temperature.

2. Make the Crust

Preheat your oven to 350°F (175°C).

Drop spoonfuls of the cooled rhubarb topping over the cheesecake layer. Using a knife or skewer, gently swirl the rhubarb into the batter to create a marbled effect.

5. Bake

Bake in the preheated oven for 30-35 minutes or until the edges are set and the center is slightly jiggly but not liquid.

6. Cool and Chill

Remove from the oven and allow to cool to room temperature. Then cover and refrigerate for at least 3 hours or preferably overnight. This helps the cheesecake set fully and makes it easier to cut.
