Ribeye steak with garlic rosemary butter

Ingredients

  • 2 ribeye steaks (about 1 inch thick)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 4 cloves garlic, smashed
  • 4 sprigs fresh rosemary
  • 4 tablespoons unsalted butter

Instructions

  1. Prepare the Steaks:
    • Remove the steaks from the refrigerator and let them sit at room temperature for at least 30 minutes before cooking to ensure even cooking.
    • Pat the steaks dry with paper towels. Season generously with salt and freshly ground black pepper on both sides.
  2. Preheat the Skillet:
    • Heat a large cast-iron skillet or heavy-bottomed pan over high heat until it is very hot and starts to smoke slightly.
  3. Sear the Steaks:
    • Add the olive oil to the skillet.
    • Place the steaks in the skillet and cook for about 3-4 minutes on each side for medium-rare, or until they reach your desired level of doneness. Use tongs to flip the steaks.
  4. Add Garlic, Rosemary, and Butter:
    • During the last 2 minutes of cooking, add the smashed garlic cloves and rosemary sprigs to the skillet.
    • Add the butter to the skillet and let it melt. Use a spoon to continuously baste the steaks with the melted butter, garlic, and rosemary.
  5. Rest the Steaks:
    • Remove the steaks from the skillet and transfer them to a plate. Let them rest for at least 5 minutes to allow the juices to redistribute.
  6. Serve:
    • Slice the steaks against the grain and serve with the garlic rosemary butter drizzled over the top.

Tips

  • Temperature Guide: Use a meat thermometer to check the internal temperature of the steak for your preferred doneness:
    • Rare: 120-130°F (49-54°C)
    • Medium-rare: 130-135°F (54-57°C)
    • Medium: 135-145°F (57-63°C)
    • Medium-well: 145-155°F (63-68°C)
    • Well-done: 155°F (68°C) and above
  • Resting the Steak: Letting the steak rest is crucial. This allows the juices to redistribute, making the steak more tender and flavorful.
  • Butter Basting: Continuously basting the steak with the garlic rosemary butter adds incredible flavor and keeps the steak moist.
