 Ingredients

 For the Garlic Bread:

  • 4 slices of thick sourdough, Italian bread, or Texas toast

  • 4 tablespoons unsalted butter, softened

  • 2 cloves garlic, finely minced or grated

  • 1 tablespoon chopped fresh parsley (or ½ tsp dried parsley)

  • ½ teaspoon garlic powder

  • Pinch of salt

 For the Filling:

  • 6–8 oz raw shrimp, peeled and deveined, tails removed

  • 1 tablespoon olive oil or butter

  • 1 clove garlic, minced

  • ½ teaspoon paprika or Old Bay seasoning

  • Salt and pepper, to taste

  • ½ teaspoon lemon juice (optional)

Cheese Options (choose 2 or 3):

  • ½ cup mozzarella, shredded

  • ½ cup cheddar, shredded

  • ½ cup provolone, shredded or sliced

  • ½ cup Monterey Jack, shredded

  • 1–2 slices American cheese (for creaminess, optional)

 Instructions

 Step 1: Make the Garlic Butter

In a small bowl, mix together:

  • Softened butter

  • Minced garlic

  • Parsley

  • Garlic powder

  • Pinch of salt

Set aside.

 Step 2: Cook the Shrimp

  1. Heat a skillet over medium heat with olive oil or butter.

  2. Add garlic and cook for 30 seconds, then add shrimp.

  3. Season with paprika (or Old Bay), salt, and pepper.

  4. Sauté shrimp until pink and cooked through, about 2–3 minutes per side.

  5. Remove from heat and roughly chop the shrimp into bite-sized pieces. Set aside.

Optional: squeeze with a little lemon juice for brightness.

 Step 3: Assemble the Sandwiches

  1. Spread garlic butter mixture on one side of each bread slice (this will be the outside of the sandwich).

  2. On the non-buttered side, layer your choice of cheese and the cooked chopped shrimp.

  3. Top with another layer of cheese (to help seal the shrimp inside) and the second slice of bread, buttered side facing out.

Step 4: Cook the Sandwiches

  1. Heat a skillet or griddle over medium-low heat.

  2. Place sandwich in pan and cook slowly until the outside is golden and crisp and the cheese is fully melted, about 3–4 minutes per side.

  3. Covering the pan with a lid can help the cheese melt evenly without burning the bread.

 Step 5: Serve

Let the sandwiches rest for 1 minute before cutting. Slice diagonally and serve hot.

Garnish with extra parsley or a light sprinkle of grated Parmesan if desired.
