Ingredients:

For the Dumplings:

  • 1 pound ground pork or chicken
  • 1/2 cup finely chopped cabbage
  • 1/4 cup chopped green onions
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package dumpling wrappers (about 24 wrappers)

For the Spicy Broth:

  • 6 cups chicken or vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon chili garlic sauce (adjust to taste for spiciness)
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons grated ginger
  • 2 cloves garlic, minced
  • 1 cup sliced shiitake mushrooms
  • 1 cup baby spinach leaves
  • 2 tablespoons chopped cilantro (optional, for garnish)
  • Sliced green onions (optional, for garnish)

Instructions:

  1. In a large mixing bowl, combine the ground pork or chicken, chopped cabbage, green onions, minced garlic, soy sauce, sesame oil, grated ginger, salt, and black pepper. Mix well until all the ingredients are evenly incorporated.
  2. Take a dumpling wrapper and place a small spoonful of the meat mixture in the center. Moisten the edges of the wrapper with water, then fold and seal the dumpling. Repeat this process until all the filling is used, making approximately 24 dumplings.
  3. In a large pot, bring the chicken or vegetable broth to a simmer over medium heat.
  4. Add soy sauce, chili garlic sauce, rice vinegar, sesame oil, grated ginger, and minced garlic to the simmering broth. Stir to combine and let the flavors infuse for a couple of minutes.
  5. Carefully add the sliced shiitake mushrooms to the broth and simmer for about 5 minutes until they start to soften.
  6. Gently drop the dumplings into the simmering broth, ensuring they don’t stick together. Cook the dumplings for about 8-10 minutes or until they are cooked through and float to the surface.
  7. Add the baby spinach leaves to the soup and stir until wilted.
  8. Taste the soup and adjust the seasoning if needed, adding more soy sauce or chili garlic sauce for extra spice.
  9. Ladle the spicy dumpling soup into serving bowls. Garnish with chopped cilantro and sliced green onions if desired.
  10. Serve the Spicy Dumpling Soup hot and enjoy the comforting blend of spicy broth and flavorful dumplings!

Note: You can customize the filling for the dumplings by adding other ingredients like minced shrimp, chopped water chestnuts, or bamboo shoots. Adjust the spiciness of the broth according to your taste preference.
