 Instructions

 Prepare the Chicken

  1. Place chicken breasts between two sheets of parchment or plastic wrap.

 Make the Filling

  1. Heat 1 tablespoon olive oil in a skillet over medium heat.

  2. Add garlic and cook for 30 seconds until fragrant.

  3. Add fresh spinach and sauté until wilted (2–3 minutes). If using frozen, just heat through.

  4. Remove from heat and stir in feta, cream cheese (if using), herbs, lemon zest, salt, and pepper. Let cool slightly.

 Assemble the Rolls

  1. Lay each chicken breast flat and place 2–3 tablespoons of the filling on one end.

  2. Roll up tightly like a burrito, securing with toothpicks or kitchen twine.

  3. Optional: Lightly sear rolls in a skillet with olive oil for 2–3 minutes to add color before baking.

 Bake

  1. Preheat oven to 375°F (190°C).

  2. Place rolls seam-side down in a lightly greased baking dish.

  3. Bake uncovered for 25–30 minutes, or until internal temp reaches 165°F (74°C).

  4. Let rest 5 minutes, then remove toothpicks and slice (if desired).
