Instructions
Prepare the Chicken
-
Place chicken breasts between two sheets of parchment or plastic wrap.
-
Gently pound to about ½-inch thickness using a meat mallet or rolling pin.
-
Season both sides with salt, pepper, and paprika or Italian seasoning.
Make the Filling
-
Heat 1 tablespoon olive oil in a skillet over medium heat.
-
Add garlic and cook for 30 seconds until fragrant.
-
Add fresh spinach and sauté until wilted (2–3 minutes). If using frozen, just heat through.
-
Remove from heat and stir in feta, cream cheese (if using), herbs, lemon zest, salt, and pepper. Let cool slightly.
Assemble the Rolls
-
Lay each chicken breast flat and place 2–3 tablespoons of the filling on one end.
-
Roll up tightly like a burrito, securing with toothpicks or kitchen twine.
-
Optional: Lightly sear rolls in a skillet with olive oil for 2–3 minutes to add color before baking.
Bake
-
Preheat oven to 375°F (190°C).
-
Place rolls seam-side down in a lightly greased baking dish.
-
Bake uncovered for 25–30 minutes, or until internal temp reaches 165°F (74°C).
-
Let rest 5 minutes, then remove toothpicks and slice (if desired).
Serving Suggestions

Serve with a side of roasted vegetables, garlic mashed potatoes, or lemon rice
