Sugar-Free Lemon Mug Cake

Ingredients:

  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 tablespoon unsweetened almond milk (or any milk of choice)
  • 1 tablespoon melted butter (or coconut oil for dairy-free)
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 1-2 tablespoons sugar substitute (like erythritol, monk fruit, or stevia, adjusted to taste)
  • Optional: 1/4 teaspoon lemon zest for extra lemon flavor

Instructions:

1. Prepare the Mug:

  • Lightly grease a microwave-safe mug or ramekin with non-stick spray or butter.

2. Mix Dry Ingredients:

  • In the mug, whisk together the almond flour and baking powder.

3. Add Wet Ingredients:

  • Add the lemon juice, almond milk, melted butter, vanilla extract, egg, and sugar substitute to the dry ingredients. Whisk everything together until the batter is smooth and free of lumps. If using, fold in the lemon zest for extra flavor.
