The Story Behind This Mousse

This recipe was born from a craving for something rich and decadent after a long week, without derailing my goals. Traditional chocolate mousse can be a points-heavy culprit, loaded with heavy cream and sugar. By harnessing the natural stability of aquafaba (the liquid from a can of chickpeas) and the deep flavor of high-quality cocoa, we create a dessert that’s miraculously light in calories but heavy on satisfaction. It’s a staple in my recipe box for dinner parties and solo treat nights alike.


Ingredients

  • 1 (15 oz) can of chickpeas, unsalted (You will use only the liquid, called aquafaba. Reserve the chickpeas for another use like salad or hummus!)

  • 4 ounces (113g) of high-quality dark chocolate (70-85% cacao), finely chopped

  • 3 tablespoons granulated sugar (or a zero-point calorie-free sweetener like erythritol for 0 SP)

  • 1 teaspoon pure vanilla extract

  • ¼ teaspoon cream of tartar (crucial for stabilizing the aquafaba)

  • 1 tablespoon unsweetened cocoa powder, for dusting (optional)

  • A pinch of sea salt

Essential Equipment

  • Stand mixer or electric hand mixer

  • Large, clean metal or glass mixing bowl

  • Heatproof bowl that fits over a saucepan (for a double boiler)

  • Small saucepan

  • Rubber spatula

  • 4 serving glasses or ramekins


Step-by-Step Instructions

Step 1: Prepare the Aquafaba

Drain the liquid from the can of chickpeas into a small saucepan. You should have about ¾ cup. Bring it to a gentle simmer over medium heat. Reduce the liquid by about one-third, to roughly ½ cup. This step concentrates the proteins, helping to create a stiffer, more stable mousse. Pour the reduced aquafaba into your clean mixing bowl and let it cool completely to room temperature. (Pro Tip: You can do this step ahead of time and chill the liquid.)

Step 2: Melt the Chocolate

While the aquafaba cools, place the chopped dark chocolate in a heatproof bowl. Set the bowl over a saucepan with 1 inch of gently simmering water (double boiler), ensuring the bowl doesn’t touch the water. Stir occasionally until the chocolate is completely melted and smooth. Remove from heat, stir in the vanilla extract and a tiny pinch of salt, and set aside to cool slightly.

Step 3: Whip to Perfect Peaks

Add the cream of tartar to the completely cooled aquafaba. Using your stand mixer or hand mixer with the whisk attachment, whip on medium-high speed. After 2-3 minutes, it will become frothy. Gradually add the sugar (or alternative sweetener), one tablespoon at a time. Continue whipping on high for 5-8 minutes, until the mixture forms stiff, glossy peaks. You should be able to turn the bowl upside down without it moving. This is the foundation of your mousse!

Step 4: Fold & Combine

The key here is gentleness. Add about one-third of the whipped aquafaba to the slightly cooled, melted chocolate. Fold vigorously with the spatula—this first addition helps loosen the chocolate. Now, pour this lightened chocolate mixture back into the bowl with the remaining whipped aquafaba. Using a cutting-and-folding motion, carefully fold the two together until no white streaks remain. Be patient; overmixing will deflate your beautiful foam.

Step 5: Chill and Set

Divide the mousse evenly among your four serving glasses. Gently tap the glasses on the counter to settle. Cover lightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight. The mousse will set and the flavors will deepen beautifully.

Step 6: Serve & Enjoy

Just before serving, dust the top of each mousse with a light sprinkle of unsweetened cocoa powder (optional, but adds a professional finish!). Enjoy your creamy, dreamy, guilt-free dessert.
