Ingredients

  • 1 pound cheese tortellini (fresh or frozen)

  • 1 cup mushrooms, sliced
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup yellow bell pepper, chopped
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil, chopped (optional, for garnish)

Instructions

  1. Preheat the Blackstone Griddle:
    • Preheat your Blackstone griddle on medium-high heat.
  2. Cook the Tortellini:
    • Bring a pot of salted water to a boil. Add the tortellini and cook according to the package instructions. Once cooked, drain and set aside.
  3. Sauté the Vegetables:
    • Add olive oil to the hot griddle.
    • Add the garlic and cook for 1 minute until fragrant.
    • Add the cherry tomatoes, mushrooms, and bell peppers to the griddle. Sauté for about 5-7 minutes until the vegetables are tender and slightly charred.
  4. Add Spinach and Tortellini:
    • Add the spinach to the griddle and cook until wilted, about 2 minutes.
    • Add the cooked tortellini to the griddle and gently toss with the vegetables to combine and heat through.
  5. Season and Serve:
    • Season with salt and pepper to taste.
    • Transfer the tortellini and vegetables to a serving dish.
    • Sprinkle with grated Parmesan cheese and chopped fresh basil, if using.
