Ingredients:

- 2 tablespoons tomato paste
- 1 teaspoon dried oregano

- 1 can (14 ounces) crushed tomatoes
- 2 cloves garlic, minced
- 1 teaspoon dried Italian herbs (basil, oregano, thyme)

- Cook Lentils:
- In a medium saucepan, combine green lentils and vegetable broth or water. Bring to a boil, then reduce heat and simmer for about 20-25 minutes or until lentils are tender but not mushy. Drain any excess liquid.
- Prepare Meatball Mixture:
- In a large bowl, combine the cooked lentils, breadcrumbs, grated Parmesan (if using), chopped onion, minced garlic, tomato paste, dried oregano, dried basil, ground cumin, salt, and pepper. Mix well.
