Ingredients:

  • 2 Ribeye steaks (about 1 pound each)

  • 4 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • 1 teaspoon lemon zest
  • Optional: lemon wedges, for serving

Instructions:

  1. Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes before grilling. This helps them cook more evenly.
  2. Preheat your grill to medium-high heat. If using a gas grill, aim for a temperature of around 400-450°F (200-230°C). If using a charcoal grill, make sure the coals are hot and glowing.
  3. While the grill is heating up, season both sides of the ribeye steaks generously with salt and freshly ground black pepper.
  4. In a small bowl, combine the softened butter, minced garlic, chopped parsley, thyme, rosemary, and lemon zest. Mix well to create the herb butter.
  5. Once the grill is ready, brush the steaks with olive oil to prevent sticking. Place the steaks on the grill and cook for about 4-5 minutes per side for medium-rare doneness, or adjust the cooking time according to your desired level of doneness.
  6. During the last 2 minutes of cooking, top each steak with a spoonful of the herb butter mixture. Allow the butter to melt and infuse the steaks with flavor.
  7. Remove the steaks from the grill and let them rest for a few minutes before slicing. This allows the juices to redistribute, resulting in a juicier steak.
  8. Optional: Serve the grilled ribeye steaks with lemon wedges on the side for added freshness.
