Cinnamon sugar crackers

Sourdough cinnamon sugar crackers are a delightful way to use up leftover sourdough starter discard. They are crispy, slightly sweet, and perfect for snacking. Here’s a simple recipe to make them:

Sourdough Cinnamon Sugar Crackers Recipe

Ingredients:

  • 1 cup (240g) sourdough starter discard (unfed)
  • 1 cup (120g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Topping:

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons melted butter

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Prepare the Dough: In a large bowl, combine the sourdough starter discard, flour, sugar, oil, salt, and ground cinnamon. Mix until a smooth dough forms. If the dough is too sticky, add a little more flour until it is workable.
  3. Roll Out the Dough: Place the dough on a lightly floured surface and roll it out as thinly as possible, ideally 1/8 inch thick or less. Thinner dough will result in crispier crackers.
  4. Cut the Crackers: Using a pizza cutter or a sharp knife, cut the dough into squares or rectangles. Transfer the cut pieces to the prepared baking sheet, placing them close together but not touching.
  5. Prepare the Topping: In a small bowl, mix the granulated sugar and ground cinnamon. Brush the rolled-out dough with melted butter and sprinkle the cinnamon sugar mixture evenly over the top.
  6. Bake the Crackers: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the crackers are crisp. Keep an eye on them to prevent burning, especially towards the end of the baking time.
  7. Cool the Crackers: Remove the baking sheet from the oven and let the crackers cool completely on a wire rack. They will continue to crisp up as they cool.
  8. Store and Enjoy: Once cooled, store the sourdough cinnamon sugar crackers in an airtight container. They can be enjoyed as a snack on their own or paired with your favorite dips.

Tips:

  • Even Thickness: Roll the dough as evenly as possible to ensure consistent baking and crispness.
  • Storage: These crackers can be stored in an airtight container at room temperature for up to a week.
  • Flavor Variations: For a different flavor, you can add a touch of vanilla extract to the dough or sprinkle some nutmeg along with the cinnamon sugar.

Enjoy your homemade sourdough cinnamon sugar crackers!
