  • 1 pound (450g) sausage meat or sausages removed from casings
  • 1 sheet of puff pastry (thawed if frozen)
  • 1 egg, beaten (for egg wash)
  • Salt and pepper to taste
  • Optional: 1 tablespoon of finely chopped fresh herbs (such as parsley or thyme)
  • Optional: 1 tablespoon of Dijon mustard or English mustard (for extra flavor)


  1. Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.
  2. Prepare the Sausage Filling: In a bowl, mix the sausage meat with salt, pepper, and any optional herbs or mustard. Ensure the mixture is well combined.
  3. Prepare the Puff Pastry: Roll out the puff pastry on a lightly floured surface. You can use a single sheet or roll it out slightly if it’s too thick. Cut the pastry into two equal rectangles.
  4. Assemble the Sausage Rolls:
    • Divide the sausage meat mixture in half and form each half into a long sausage shape.
    • Place each sausage log along one long edge of each pastry rectangle.
    • Brush the opposite long edge of the pastry with beaten egg.
    • Roll the pastry around the sausage meat, sealing the edge with the egg wash.
