Instructions:
Prepare the Filling:
- Cook Ground Meat:
- In a large skillet, heat olive oil over medium-high heat. Add chopped onions and minced garlic, sautéing until softened. Add ground beef or turkey, breaking it apart with a spoon, and cook until browned.
- Season with Taco Mix:
- Sprinkle taco seasoning over the meat, stirring to combine. Follow the package instructions for the correct amount of water. Simmer until the mixture thickens.
- Add Vegetables:
- Add black beans, corn, and quartered cherry tomatoes to the skillet. Stir well and cook for an additional 3-5 minutes until the vegetables are heated through. Season with salt and black pepper to taste.
- Assemble Cheesy Pocket Tacos:
