Air Fryer Potato Skins

Ingredients:
- 4 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and black pepper to taste
- 1 cup shredded cheddar cheese
- 4 slices of bacon, cooked and crumbled
- Sour cream and chopped green onions for garnish
Instructions:
- Preheat Air Fryer:
- Preheat your air fryer to 400°F (200°C).
- Clean and Pierce Potatoes:
- Wash the potatoes thoroughly and pierce them several times with a fork.
- Air Fry Potatoes:
- Place the potatoes in the air fryer basket and cook for 25-30 minutes, or until the skins are crispy and the insides are tender.
- Cut and Scoop:
- Allow the potatoes to cool slightly. Cut them in half lengthwise and scoop out the insides, leaving about 1/4 inch of potato attached to the skins. Save the scooped-out potato for another use.
- Season Potato Skins:
- Brush the inside and outside of the potato skins with olive oil.
- In a small bowl, mix garlic powder, onion powder, paprika, salt, and black pepper. Sprinkle this mixture on the inside and outside of the potato skins.
- Air Fry Again:
- Place the seasoned potato skins back into the air fryer basket and air fry for an additional 5-7 minutes, or until they become golden brown and crisp.
- Add Cheese and Bacon:
- Sprinkle shredded cheddar cheese and crumbled bacon evenly inside each potato skin.
- Final Air Fry:
- Return the loaded potato skins to the air fryer and cook for an additional 3-5 minutes, or until the cheese is melted and bubbly.
- Garnish and Serve:
- Remove the potato skins from the air fryer and garnish with sour cream and chopped green onions.
- Enjoy!
