Baking Time: 45 minutes
Cooling Time: 1-2 hours
Servings: 8-10
Ingredients:
- 4 large eggs, at room temperature
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1/4 cup honey
- 1/4 cup milk
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla extract
Instructions:
- Preheat the Oven:
- Preheat your oven to 325°F (163°C). Line a rectangular baking pan (about 9×5 inches) with parchment paper.
- Prepare the Eggs:
- In a large mixing bowl, beat the eggs until they become frothy and slightly pale in color.
- Add Sugar Gradually:
- Gradually add the granulated sugar to the beaten eggs while continuing to beat. Beat until the mixture becomes thick and pale, and the sugar is well incorporated.
- Sift the Flour:
- Sift the all-purpose flour into the egg and sugar mixture in small batches. Gently fold the flour into the batter using a spatula. Do not overmix; just fold until no flour streaks remain.
- Combine Honey, Milk, and Oil:
- In a separate bowl, mix together honey, milk, vegetable oil, and vanilla extract. Add this mixture to the batter and gently fold until well combined.
- Pour Batter into the Pan:
- Pour the batter into the prepared baking pan, spreading it evenly.
- Bake:
- Bake in the preheated oven for about 45 minutes or until a toothpick inserted into the center comes out clean.
- Cooling:
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Slice and Serve:
- Once cooled, slice the Castella cake into squares or rectangles and serve.
- Enjoy Your Castella Cake!
- This cake is delicious on its own, but you can also serve it with a dusting of powdered sugar, fresh berries, or a dollop of whipped cream.
Note:
- It’s crucial to sift the flour to ensure a light and fluffy texture.
- Be gentle when folding the ingredients to avoid deflating the batter.
- Adjust the sweetness by varying the amount of sugar or honey according to your preference.
