Ingredients:

For Carne Guisada:

  • 2 lbs beef stew meat, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 tomatoes, diced
  • 1 bell pepper, diced
  • 2 jalapeños, seeded and finely chopped
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For Flour Tortillas:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 3/4 cup warm water

Instructions:

For Carne Guisada:

  1. Season and Brown the Beef:
    • In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Season the beef with salt and pepper, then brown it in batches until seared on all sides. Remove the browned meat and set aside.
  2. Sauté Aromatics:
    • In the same pot, add chopped onion, minced garlic, diced tomatoes, bell pepper, and jalapeños. Sauté until the vegetables are softened.
  3. Make the Roux:
    • Sprinkle flour over the sautéed vegetables and stir to create a roux. Cook for 2-3 minutes until the flour is lightly browned.
  4. Add Beef and Liquid:
    • Return the browned beef to the pot. Pour in beef broth, tomato sauce, and add chili powder, cumin, oregano, paprika, salt, and pepper. Stir to combine.
  5. Simmer:
    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 1.5 to 2 hours or until the beef is tender and the flavors are well blended.

For Flour Tortillas:

  1. Mix Dry Ingredients:
    • In a mixing bowl, whisk together flour, baking powder, and salt.
  2. Add Wet Ingredients:
    • Add vegetable oil to the flour mixture and gradually add warm water. Mix until a dough forms.
  3. Knead and Rest:
    • Knead the dough on a floured surface for 3-4 minutes until it becomes smooth. Cover with a damp cloth and let it rest for 15-20 minutes.
  4. Form Tortillas:
    • Divide the dough into golf ball-sized portions. Roll each portion into a ball and flatten into a thin round using a rolling pin.
  5. Cook Tortillas:
    • Heat a skillet over medium-high heat. Cook each tortilla for about 30 seconds on each side or until it puffs up and has golden brown spots.
  6. Serve:
    • Serve the Carne Guisada over warm flour tortillas. Garnish with fresh cilantro, diced onions, and a squeeze of lime if desired.
