Roasted chicken garlic and roasted potatoes with mushrooms and bacon

Ingredients:

For the Roasted Chicken:

  • 1 whole chicken (about 4-5 pounds)
  • 4 tablespoons olive oil
  • 6 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • Salt and black pepper to taste

For the Roasted Potatoes:

  • 1.5 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • Salt and black pepper to taste

For the Mushrooms and Bacon:

  • 8 oz cremini or button mushrooms, cleaned and halved
  • 6 slices bacon, cooked and crumbled

For Garnish:

  • Fresh parsley, chopped

Instructions:

Preparing the Roasted Chicken:

  1. Preheat Oven: Preheat your oven to 425°F (220°C).

  2. Clean and Pat Dry Chicken: Rinse the whole chicken inside and out under cold water. Pat it dry with paper towels.

  3. Season Chicken: In a small bowl, mix together olive oil, minced garlic, dried thyme, dried rosemary, salt, and black pepper. Rub the chicken with this mixture, ensuring it’s evenly coated.

  4. Roast Chicken: Place the seasoned chicken on a roasting pan or a baking sheet with a wire rack. Roast in the preheated oven for about 1 hour or until the internal temperature reaches 165°F (74°C). If the skin is getting too brown, cover it loosely with foil.

Preparing the Roasted Potatoes:

  1. Prep Potatoes: While the chicken is roasting, halve the baby potatoes and place them in a bowl.

  2. Coat with Olive Oil: Drizzle olive oil over the halved potatoes. Season with salt and black pepper. Toss to coat.

  3. Roast Potatoes: About 40 minutes before the chicken is done, spread the potatoes around the chicken in the roasting pan. Continue roasting until the potatoes are golden brown and crispy.

Preparing the Mushrooms and Bacon:

  1. Cook Bacon: Cook the bacon slices until crispy. Crumble or chop into pieces.

  2. Sauté Mushrooms: In the same pan, sauté the halved mushrooms in the bacon fat until they are golden brown and cooked through.

Assembling and Serving:

  1. Rest Chicken: Once the chicken is done, let it rest for about 10 minutes before carving.

  2. Serve Together: Carve the chicken into serving portions. Arrange the roasted potatoes, sautéed mushrooms, and bacon around the carved chicken on a serving platter.

  3. Garnish and Serve: Garnish the dish with chopped fresh parsley. Serve hot.
