Roasted Green Tomato Soup Recipe

Ingredients:

  • 2 lbs (900g) green tomatoes, quartered
  • 1 large onion, quartered
  • 4 garlic cloves, peeled
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon smoked paprika (optional)
  • 1/2 teaspoon ground cumin (optional)
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream or coconut milk (optional, for creaminess)
  • Fresh basil or cilantro, for garnish
  • Croutons or crusty bread (optional)

Instructions:

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C).

Step 2: Prepare the Vegetables for Roasting

  1. On a baking sheet, spread out the quartered green tomatoes, onion, and garlic cloves.
  2. Drizzle with olive oil and sprinkle generously with salt, pepper, smoked paprika, and cumin (if using).
  3. Toss everything together so the vegetables are evenly coated with oil and spices.

Step 3: Roast the Vegetables

  1. Roast the tomatoes, onion, and garlic in the preheated oven for about 25-30 minutes, or until the tomatoes are soft and slightly charred around the edges.

Step 4: Blend the Soup

  1. Once the vegetables are roasted, transfer them to a blender or food processor.
  2. Add 2 cups of the broth and blend until smooth. For a chunkier texture, blend less.
  3. If you prefer a thinner soup, add more broth to reach your desired consistency.

Step 5: Heat and Season the Soup

  1. Pour the blended mixture into a large pot over medium heat.
  2. Stir in the remaining broth and bring the soup to a simmer. Cook for 10 minutes, stirring occasionally.
  3. If you’re adding cream or coconut milk, stir it in now and let it heat through for another 2-3 minutes.
  4. Taste and adjust the seasoning with more salt and pepper if needed.

Step 6: Serve

  1. Ladle the roasted green tomato soup into bowls.
  2. Garnish with fresh basil or cilantro, and serve with croutons or a slice of crusty bread on the side.
