Ingredients
- For the Marinade:
- 1/4 cup olive oil
- 1/4 cup lime juice

- For the Fajitas:
- 1 lb skirt steak or chicken breast, thinly sliced
- 1 large red bell pepper, thinly sliced
- 1 large green bell pepper, thinly sliced
- 1 large yellow bell pepper, thinly sliced
- 1 large onion, thinly sliced
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- For Serving:
- Flour tortillas
- Sour cream
- Guacamole
- Salsa
- Shredded cheese
- Fresh cilantro, chopped
- Lime wedges
Instructions
- Prepare the Marinade:
- In a large bowl, combine the olive oil, lime juice, minced garlic, ground cumin, chili powder, paprika, salt, and black pepper.
- Add the sliced steak or chicken to the marinade, tossing to coat.
- Cover and refrigerate for at least 30 minutes, or up to 2 hours for best flavor.
- Preheat the Blackstone Griddle:
- Preheat your Blackstone griddle to medium-high heat.
- Cook the Fajitas:
- Drizzle the vegetable oil onto the preheated griddle.
- Add the marinated steak or chicken to one side of the griddle and the sliced bell peppers and onion to the other side.
- Cook the steak or chicken for 4-5 minutes on each side until fully cooked and slightly charred.
- Sauté the vegetables, stirring occasionally, until they are tender and caramelized, about 8-10 minutes.
- Season the vegetables with salt and pepper to taste.
- Combine and Serve:
- Once cooked, combine the steak or chicken with the sautéed vegetables on the griddle.
- Toss everything together and cook for an additional 2-3 minutes to combine flavors.
- Remove from the griddle and transfer to a serving platter.
- Assemble the Fajitas:
- Warm the flour tortillas on the griddle for about 30 seconds on each side.
- Fill each tortilla with the fajita mixture.
- Top with sour cream, guacamole, salsa, shredded cheese, fresh cilantro, and a squeeze of lime juice.
