Ingredients
- 1 large onion, chopped
- 3 cloves garlic, minced
- 6 cups potatoes, peeled and diced (about 4-5 medium potatoes)
- 2 cups cooked ham, diced
- 3 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1 cup heavy cream or half-and-half
- 2 tablespoons cornstarch (optional, for thickening)
- 2 tablespoons water (optional, for thickening)
Instructions
- Prepare Ingredients:
- Chop the onion, garlic, potatoes, ham, carrots, and celery.
- Combine in Slow Cooker:
- Add the chopped onion, garlic, potatoes, ham, carrots, and celery to the slow cooker.
- Pour in the chicken broth and add the dried thyme, dried parsley, salt, and pepper. Stir to combine.
- Cook:
- Cover the slow cooker with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes and vegetables are tender.
- Add Cream:
- About 30 minutes before serving, stir in the heavy cream or half-and-half.
- If you prefer a thicker soup, mix the cornstarch with water to make a slurry and stir it into the soup. Continue to cook for another 30 minutes until the soup thickens.
- Adjust Seasoning and Serve:
- Taste and adjust the seasoning with more salt and pepper if needed.
- Ladle the soup into bowls and serve hot.
