Crockpot Chicken Spaghetti

Ingredients:

  • 1 lb (450g) boneless, skinless chicken breasts
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1 can (10.5 oz) Rotel diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 8 oz (225g) spaghetti, uncooked
  • 2 cups shredded cheddar cheese (divided)
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, for garnish (optional)

Instructions:

Step 1: Prepare the Crockpot Base

  1. Place the chicken breasts in the bottom of your crockpot.
  2. Pour the cream of mushroom soup, Rotel diced tomatoes (with their juice), and chicken broth over the chicken.
  3. Add the garlic powder, onion powder, Italian seasoning, salt, and pepper. Stir the mixture gently to combine.
  4. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is fully cooked and tender.

Step 2: Shred the Chicken

  1. Once the chicken is cooked, use two forks to shred the chicken directly in the crockpot. Stir the shredded chicken into the sauce.

Step 3: Cook the Spaghetti

  1. About 20 minutes before serving, cook the spaghetti according to the package directions. Drain and set aside.

Step 4: Combine and Add Cheese

  1. Add the cooked spaghetti to the crockpot with the shredded chicken and sauce.
  2. Stir in the cream cheese, 1 1/2 cups of shredded cheddar cheese, and Parmesan cheese. Mix everything until the cheese is melted and well combined.

Step 5: Melt the Remaining Cheese

  1. Sprinkle the remaining 1/2 cup of shredded cheddar cheese on top of the spaghetti mixture in the crockpot.
  2. Cover and cook on LOW for an additional 10-15 minutes, or until the cheese on top is melted and bubbly.

Step 6: Serve

  1. Once the cheese is melted, serve the chicken spaghetti hot. Garnish with fresh parsley if desired.

  • Make it Creamier: If you prefer a creamier texture, you can add an extra 1/4 cup of heavy cream or more cream cheese.
  • Veggie Add-ins: For extra nutrition, consider adding diced bell peppers, mushrooms, or spinach during the last 30 minutes of cooking.
