No-Flour, No-Sugar Oatmeal Cookies

Ingredients:

  • 2 ripe bananas, mashed
  • 1 1/2 cups old-fashioned oats
  • 1/2 cup peanut butter (or almond butter)
  • 1/4 cup raisins, chopped dates, or dried cranberries (optional for natural sweetness)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • Pinch of salt
  • 1/4 cup chopped nuts, seeds, or dark chocolate chips (optional)

Instructions:

Step 1: Preheat Oven

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it.

Step 2: Mix Ingredients

  1. In a large bowl, mash the bananas until smooth.
  2. Stir in the peanut butter and vanilla extract, mixing until well combined.
  3. Add the oats, cinnamon (if using), and a pinch of salt. Stir until everything is evenly mixed.
  4. Fold in any optional ingredients like raisins, chopped nuts, or chocolate chips.

Step 3: Shape the Cookies

  1. Using a tablespoon or cookie scoop, drop small mounds of dough onto the prepared baking sheet.
  2. Gently flatten each mound with the back of a spoon or your fingers to form cookie shapes.
