Ingredients:

For the strawberry layer:

  • 2 cups fresh strawberries, hulled and chopped
  • 2 tablespoons granulated sugar

  • Whipped cream (optional)

Instructions:

  1. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the crumbs are evenly moistened.
  2. In another bowl, beat the softened cream cheese until smooth using a hand mixer or stand mixer. Add the powdered sugar and vanilla extract, and continue beating until creamy and well combined.
  3. In a separate bowl, whip the cold heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the cream cheese mixture until fully incorporated. Set aside.
  5. In a blender or food processor, combine the chopped strawberries, granulated sugar, and lemon juice. Blend until smooth to create the strawberry puree.
  6. To assemble the strawberry cheesecake jars, start by layering the graham cracker mixture at the bottom of each jar, dividing it evenly among the jars.
  7. Next, add a layer of the cream cheese mixture on top of the graham cracker layer, again dividing it evenly among the jars.
  8. Spoon a layer of the strawberry puree over the cream cheese layer in each jar.
  9. Repeat the layers as desired, ending with a dollop of whipped cream on top of each jar for garnish.
  10. Cover the jars with lids or plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the cheesecake to set.
  11. Before serving, garnish each jar with fresh sliced strawberries and additional whipped cream if desired.
