  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 teaspoon sugar or honey (optional, for added sweetness)
  • Cooked rice or noodles, for serving

  • Sesame seeds, for garnish (optional)

Instructions

  1. Prepare the Ingredients:
    • Thinly slice the beef into strips.
    • Slice the bell peppers and onion into strips.
    • Mince the garlic.
  2. Assemble in Crockpot:
    • Place the sliced beef, bell peppers, onion, and minced garlic into the crockpot.
  3. Add Sauces and Seasonings:
    • In a medium bowl, mix together the diced tomatoes (with juice), soy sauce, beef broth, Worcestershire sauce, ground ginger, black pepper, and sugar or honey (if using). Pour this mixture over the beef and vegetables in the crockpot.
  4. Cook:
    • Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the beef is tender and the vegetables are cooked through.
  5. Thicken the Sauce:
    • About 30 minutes before serving, mix the cornstarch (or arrowroot powder) with water to create a slurry. Stir the slurry into the crockpot to thicken the sauce. Cover and continue to cook for the remaining 30 minutes.
  6. Serve:
    • Serve the pepper steak over cooked rice or noodles. Garnish with chopped green onions and sesame seeds if desired.
