Instructions

  1. Preheat Oven:
    • Preheat your oven to 325°F (165°C).
  2. Prepare the Custard Mixture:
    • In a large mixing bowl, whisk the eggs until well-beaten.
    • Gradually add the heavy cream and water (if using), whisking continuously until the mixture is smooth and fully combined.
    • Add the vanilla extract, sweetener (if using), and a pinch of salt. Whisk to incorporate.
  3. Strain the Mixture:
    • For an extra smooth custard, pour the mixture through a fine mesh strainer into another bowl or large measuring cup. This step helps remove any bits of egg that didn’t fully incorporate.
  4. Prepare the Baking Dish:
    • Pour the custard mixture into a baking dish or individual ramekins. Place the baking dish(es) in a larger roasting pan.
  5. Bake the Custard:
    • Pour hot water into the roasting pan until it reaches halfway up the sides of the baking dish(es). This water bath will help the custard cook evenly.
    • Carefully transfer the roasting pan to the preheated oven. Bake for 30-35 minutes, or until the custard is set but still slightly jiggly in the center.
  6. Cool and Serve:
    • Remove the baking dish(es) from the water bath and let the custard cool to room temperature. Then refrigerate for at least 2 hours, or until fully chilled and set.
