Carnivore pancakes

Ingredients

  • 4 large eggs
  • 4 oz cream cheese, softened
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 teaspoon vanilla extract (optional)
  • Butter or ghee, for cooking

Instructions

  1. Blend Ingredients:
    • In a blender or food processor, combine the eggs, softened cream cheese, ground cinnamon, and vanilla extract (if using). Blend until the mixture is smooth and well-combined.
  2. Preheat the Pan:
    • Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or ghee to the pan and let it melt.
  3. Cook the Pancakes:
    • Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges start to look set, about 2-3 minutes.
    • Carefully flip the pancakes and cook for an additional 1-2 minutes, until golden brown and cooked through.
  4. Serve:
    • Serve the pancakes hot with your choice of carnivore-friendly toppings, such as more butter, ghee, or a bit of crispy bacon.

Tips

  • Consistency: The batter will be thinner than traditional pancake batter. Pour slowly to control the size of the pancakes.
  • Blender Method: Using a blender or food processor ensures a smooth batter with no lumps of cream cheese.
  • Storage: Leftover pancakes can be stored in the refrigerator for up to 3 days. Reheat in a skillet or microwave before serving.
