Ingredients

  • 1 cup quark (or Greek yogurt as a substitute)
  • 2 large eggs
  • 1/3 cup honey or maple syrup (adjust for sweetness)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour (or gluten-free flour)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • Optional: 1/3 cup chocolate chips, blueberries, or nuts

Instructions

Step 1: Prepare the Batter

  1. In a large bowl, whisk together the quark, eggs, honey, and vanilla extract until smooth.
  2. In a separate bowl, mix the flour, baking powder, baking soda, and salt.
  3. Gradually fold the dry ingredients into the wet ingredients until just combined. Avoid overmixing.
  4. If desired, gently fold in chocolate chips, blueberries, or nuts.

Step 2: Prepare the Cosori Air Fryer

  1. Preheat your Cosori air fryer to 325°F (160°C) for 3–5 minutes.
  2. Place silicone muffin cups or parchment liners in the air fryer basket.

Step 3: Fill and Cook

  1. Spoon the batter evenly into the muffin cups, filling each about 3/4 full.
  2. Place the filled cups in the preheated air fryer basket, ensuring they are not touching.
  3. Cook at 325°F (160°C) for 12–15 minutes, or until a toothpick inserted in the center comes out clean.

Step 4: Cool and Serve

  1. Remove the muffins from the air fryer and let them cool for 5 minutes in the cups before transferring them to a wire rack.
  2. Serve warm or store in an airtight container for up to 3 days.

Tips for Success

  • Substitutions: You can use almond or coconut flour for a gluten-free option. Adjust the liquid if needed.
  • Add-Ins: Try adding lemon zest or a pinch of cinnamon for extra flavor.
  • Batch Cooking: If making a large batch, cook the muffins in multiple batches, as the Cosori air fryer basket may hold only 6–8 muffins at a time.
