Description:
These Oatmeal, Apple, and Carrot Bites are naturally sweetened and packed with wholesome ingredients. Perfect as a healthy snack, breakfast treat, or dessert, they’re free of flour and refined sugar while being loaded with fiber and flavor.

Ingredients:
2 cups rolled oats
1 medium apple, grated (with skin, cored)
1 medium carrot, grated
1/4 cup raisins or chopped dates (optional, for added sweetness)
1/4 cup unsweetened applesauce
2 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon baking powder
Pinch of salt
Instructions:
1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
2. Mix the Ingredients:
In a large mixing bowl, combine the grated apple, grated carrot, applesauce, eggs, and vanilla extract. Mix well.
Add the oats, cinnamon, nutmeg, baking powder, and salt. Stir until well incorporated.
Fold in the raisins or chopped dates if using.
3. Shape and Bake:
Using a spoon or your hands, form the mixture into small bite-sized mounds (about 1 1/2 inches in diameter) and place them on the prepared baking sheet.
Bake for 18-20 minutes, or until the bites are golden brown and set.
4. Cool and Serve:
Let the bites cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Serve warm or at room temperature.
