Chicken and Potatoes with Garlic Parmesan Cream Sauce

Recipe: Chicken and Potatoes with Garlic Parmesan Cream Sauce

Ingredients:

For the Chicken and Potatoes:

  • 4 boneless, skinless chicken breasts
  • 1 1/2 lbs baby potatoes, halved or quartered
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

For the Garlic Parmesan Cream Sauce:

  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme)
  • Salt and black pepper to taste

Instructions:

For the Chicken and Potatoes:

  1. Preheat your oven to 400°F (200°C).
  2. In a large mixing bowl, combine the halved potatoes with olive oil, garlic powder, onion powder, dried thyme, salt, and black pepper. Toss until the potatoes are well coated.
  3. Place the seasoned potatoes on a baking sheet.
  4. Season the chicken breasts with salt and black pepper.
  5. In an oven-safe skillet, heat olive oil over medium-high heat. Brown the chicken breasts on both sides for about 2-3 minutes per side.
  6. Place the browned chicken breasts on the baking sheet with the potatoes.
  7. Roast in the preheated oven for 25-30 minutes or until the chicken is cooked through and the potatoes are golden brown and tender.

For the Garlic Parmesan Cream Sauce:

  1. In the same skillet used for browning the chicken, add minced garlic and sauté for 1-2 minutes until fragrant.
  2. Pour in chicken broth, scraping the bottom of the pan to release any browned bits.
  3. Add heavy cream, grated Parmesan cheese, dried Italian herbs, salt, and black pepper. Stir until the sauce is smooth and well combined.
  4. Simmer the sauce for 5-7 minutes or until it thickens slightly.

To Serve:

  1. Place the roasted chicken breasts and potatoes on a serving platter.
  2. Pour the Garlic Parmesan Cream Sauce over the chicken and potatoes.
  3. Garnish with chopped fresh parsley.
