Recipe: Creamy Hungarian Mushroom Soup

  • 3 tablespoons unsalted butter
  • 1 large onion, finely chopped
  • 1 lb mushrooms, sliced (cremini or button mushrooms work well)
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 tablespoon Hungarian paprika
  • 4 cups vegetable or chicken broth
  • 2 teaspoons soy sauce
  • 1 teaspoon dried dill
  • Salt and black pepper to taste
  • 1 cup sour cream
  • 1/4 cup all-purpose flour (for the roux)
  • Fresh parsley, chopped, for garnish


Sauté Mushrooms and Onions:

  1. In a large pot, melt 2 tablespoons of butter over medium heat.
  2. Add finely chopped onions and cook until softened.
  3. Add sliced mushrooms to the pot and cook until they release their moisture and become golden brown.

Make the Roux:

  1. Push the mushrooms and onions to one side of the pot, creating a clear space.
  2. Melt the remaining 1 tablespoon of butter in the clear space.
  3. Sprinkle 1/4 cup of flour over the melted butter to create a roux. Stir and cook for 1-2 minutes.

Add Paprika and Garlic:

  1. Stir in the minced garlic and Hungarian paprika, cooking for an additional 1-2 minutes.

Make the Soup Base:

  1. Gradually pour in the vegetable or chicken broth, stirring constantly to avoid lumps.
  2. Add soy sauce, dried dill, salt, and black pepper. Bring the soup to a gentle simmer.

 Thicken the Soup:

  1. In a small bowl, mix sour cream and 1/4 cup of flour to create a smooth mixture.
  2. Gradually whisk the sour cream mixture into the soup, stirring continuously.
  3. Continue to simmer until the soup thickens slightly.

  2. Garnish with chopped fresh parsley.
