Ingredients
Shrimp
- 1½ pounds (680 g) large shrimp, peeled and deveined
- 1 lemon, sliced
- 2 tablespoons kosher salt
Marinade
- ¾ cup (180 ml) apple cider vinegar
- ½ cup (120 ml) olive oil
- 1 medium red onion, thinly sliced
- 2 garlic cloves, thinly sliced
- 2 teaspoons Dijon mustard
- 1 tablespoon sugar (optional)
- 1 teaspoon crushed red pepper flakes
- 2 teaspoons whole black peppercorns
- 1 teaspoon celery seeds
- 3 sprigs fresh dill
- 3 sprigs fresh parsley
- 2 bay leaves
- ½ cup (120 ml) fresh lemon juice
Instructions
Step 1: Prepare the Shrimp
- Fill a large pot with water, add kosher salt, and squeeze in juice from the lemon slices. Drop the lemon slices into the pot.
- Bring the water to a boil and add the shrimp. Cook for 2–3 minutes or until the shrimp are just pink and opaque.
- Drain the shrimp and transfer them to an ice bath to stop the cooking process. Once chilled, pat the shrimp dry with paper towels.
Step 2: Make the Marinade
- In a large bowl or jar, whisk together the apple cider vinegar, olive oil, Dijon mustard, sugar (if using), and lemon juice.
- Stir in the red onion, garlic, red pepper flakes, black peppercorns, celery seeds, dill, parsley, and bay leaves.
Step 3: Combine and Marinate
- Place the cooked shrimp in the marinade, ensuring all shrimp are submerged.
- Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.
Step 4: Serve
- Before serving, stir the shrimp and marinade to redistribute the flavors.
- Transfer the pickled shrimp to a serving platter with some of the marinade ingredients for garnish.
- Pair with crackers, crusty bread, or serve atop a fresh salad.
