Ingredients:

For the filling:

  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons low-carb sweetener
  • 1 tablespoon ground cinnamon

For the icing:

  • 2 tablespoons cream cheese, softened
  • 1 tablespoon heavy cream
  • 1 tablespoon low-carb sweetener
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Dough:
    • In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.
    • Add melted butter, egg, sweetener, and vanilla extract. Mix until a dough forms.
    • Place the dough between two sheets of parchment paper and roll it out into a rectangle about 1/4 inch thick.
  2. Make the Filling:
    • Spread softened butter evenly over the rolled-out dough.
    • Sprinkle sweetener and cinnamon over the butter layer.
  3. Roll and Cut:
    • Carefully roll the dough into a log, starting from one long edge.
    • Use a sharp knife to slice the log into 8 equal-sized rolls.
  4. Preheat the Air Fryer:
    • Preheat your air fryer to 350°F (175°C).
  5. Air Fry the Cinnamon Rolls:
    • Place the cinnamon rolls in the preheated air fryer basket, leaving space between each roll.
    • Air fry for about 8-10 minutes, or until the rolls are golden brown and cooked through.
  6. Make the Icing:
    • While the rolls are cooking, prepare the icing by mixing softened cream cheese, heavy cream, sweetener, and vanilla extract until smooth.
  7. Serve:
    • Once the cinnamon rolls are done, remove them from the air fryer.
    • Drizzle the cream cheese icing over the warm cinnamon rolls.
