  • 1 can (15 ounces) green beans, drained
  • 1 can (15 ounces) carrots, drained and sliced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup frozen tater tots
  • Shredded cheddar cheese for garnish
  • Chopped fresh parsley or green onions for garnish

Instructions:

  1. In a large pot or Dutch oven, brown the ground beef or turkey over medium heat, breaking it up into crumbles as it cooks.
  2. Add the chopped onion and minced garlic to the pot with the meat. Sauté until the onions are translucent and the garlic is fragrant.
  3. Pour in the beef or vegetable broth, diced tomatoes (undrained), corn kernels, green beans, and sliced carrots. Stir to combine.
  4. Add the dried oregano, dried basil, salt, and pepper to the soup. Stir well, then bring the mixture to a simmer.
  5. Let the soup simmer uncovered for about 15-20 minutes, allowing the flavors to meld together and the vegetables to soften.
  6. While the soup is simmering, preheat your oven according to the instructions on the tater tots package.
  7. Arrange the frozen tater tots in a single layer on a baking sheet. Bake them in the preheated oven according to the package instructions until golden and crispy.
  8. Once the tater tots are cooked, remove them from the oven and set aside.
  9. Check the soup for seasoning and adjust with more salt and pepper if needed.
  10. Ladle the hot soup into serving bowls. Top each bowl with a handful of crispy tater tots.
