Ingredients:

  • 1 loaf of almond flour bread, cubed (about 8 cups)
  • 1/2 cup unsalted butter, melted
  • 1 cup diced onion

  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon chopped fresh thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups chicken or vegetable broth
  • 2 large eggs, beaten
  • Optional: chopped pecans or almonds for topping

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  2. Spread the cubed almond flour bread on a baking sheet and toast in the preheated oven for about 10-12 minutes, or until lightly golden and slightly crisp. Remove from the oven and set aside.
  3. In a large skillet, melt the unsalted butter over medium heat. Add the diced onion, celery, and mushrooms. Sauté until the vegetables are softened, about 5-6 minutes.
  4. Add the minced garlic, chopped parsley, sage, thyme, salt, and black pepper to the skillet. Cook for an additional 2-3 minutes, stirring frequently, until the garlic is fragrant and the herbs are aromatic. Remove from heat.
  5. In a mixing bowl, combine the toasted almond bread cubes with the sautéed vegetable and herb mixture. Toss gently to mix everything together evenly.
  6. In a separate bowl, whisk together the chicken or vegetable broth and beaten eggs until well combined.
  7. Pour the broth and egg mixture over the almond bread and vegetables in the mixing bowl. Stir gently to coat all the bread cubes with the liquid mixture.
  8. Transfer the dressed almond bread mixture to the prepared baking dish, spreading it out evenly.
